What you need

  • 2 very ripe bananas
  • 2 cups rolled oats
  • 1 egg
  • 1/3 cup milk of choice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/3 cup mini chocolate chips, raisins or finely chopped berries

Make it

    Heat the oven to 350°F and grease a 12-cup mini muffin pan or line a baking sheet.

    Mash bananas, then stir in the egg, milk, cinnamon and vanilla.

    Fold in oats and one mix-in. Let the mixture sit for 5 minutes.

    Scoop into the pan or make 12 small mounds on the baking sheet.

    Bake 13 to 16 minutes until set. Cool completely before refrigerating or freezing.

The no-drama serving plan

Pair two bites with yogurt, cheese or a nut-free seed butter if your family uses it. For toddlers, adjust size and texture to the child's eating skills and supervise meals.

  • Freeze in a single layer, then transfer to a bag.
  • Thaw overnight or warm briefly in the microwave.
  • Use certified gluten-free oats if your household requires them.

Let the bananas do the work

The riper the bananas, the sweeter and softer the bites. If your bananas are only lightly spotted, add a tablespoon of maple syrup if desired.
